"Beta! Add an extra tablespoon of sugar to my tea", said my grandma. In a fraction of a second, my father looked at her with his eyes wide open in utter anger. Reason, Grandma's reports read DIABETIC in a corner. My grandma has had a sweet tooth for most of her life and it still gets difficult for her to curb her desire to eat sweets. But it's been almost three years to this story and since then we have been extremely careful with what she eats.
Diabetes carries a literal meaning of a condition wherein the body's blood sugar level exceeds the normal blood sugar level. This condition occurs when there is a lack of insulin production in your body and the insulin is not used properly as well. Food is the one thing that can directly affect your blood sugar and why not use it at the right place?
Diabetes-friendly recipes:
- Quinoa and vegetable salad: in a bowl, mix soaked and slightly cooked quinoa along with vegetables and coriander leaves. Add lemon juice, olive oil, salt, pepper, and spices of choice. Toss it all together and make a salad.
- Multi-flour idli: soak a mix of urad dal and moong dal overnight. Blend it into a smooth mixture and add bajra flour, jowar flour, ragi flour, and wheat flour in the same mixture. Add salt to taste, veggies of choice and a few curry leaves along with mustard seeds. Steam for 10 mins and serve with a side of tomato chutney and rasam.
- Dal khichadi: soak moong dal along with rice and pressure cook them along with chopped vegetables like chilies, onions, peas, carrots, and beans. Add salt, red chili powder and turmeric for flavoring. Serve with a drizzle of ghee or butter.
- Paneer parantha: knead a soft dough of wheat flour with salt and oil. Prepare a mixture of crumbled paneer, salt, red chili powder, spices of choice and coriander. Stuff the dough with the paneer mixture and cook it till crispy along with curd or pickle.
A lot of people might find peace in eating recipes which have low sugar content hence leading to a better blood sugar level. Deciding on a diet beforehand helps you to limit carbs and help in portion control. Although eating salads, sandwiches and wraps may sound boring for a diet but diet foods don't always have to taste bad. All these recipes make up for a great meal that is tasty as well.
Generally, a low-carb, low-calorie, and low-sugar is suggested to diabetic patients. Anything that is easily digested and consumed is also one way of maintaining the diet. But one should always consult their doctor before framing up a diet.
