Almond milk is an alternative to regular dairy milk and a great option for people who have just started going vegan. It is nut-based and hence super rich in nutrients. It contains high amounts of calcium, vitamin E  and riboflavin.

  1. 1 cup almonds soaked overnight
  2. Water to blend
  3. Sweetener: maple syrup or honey
  4. vanilla extract if needed

Procedure:

  1. Soak the almonds in warm overnight till the skin comes off and they are soft enough to churn into a paste.
  2. Drain and rinse the almonds before you churn them.
  3. Put the soaked almonds in a blender with water as required.
  4. Blend it into a smooth paste till the fiber and milk are separated.
  5. Strain the almond milk and separate the fiber.
  6. Add a sweetener of choice such as maple syrup or honey if required.
  7. Add vanilla extract and store it in a glass container.

The almond milk you make at home will have a better shelf-life than the ones available in the market. You can store it for the next 4-5 days with proper refrigeration. Your almond milk is good to go. You can use it in your smoothies, coffee, or even tea. It is a great alternative for desserts as well.
